Venison Cheddar Bay Biscuit Casserole

Comfort food meets wild game in this rich, hearty casserole. Ambassador Jennifer Danella takes savory ground venison and layers it into a creamy, cheesy base, then tops with golden, buttery Cheddar Bay biscuits that bake up fluffy and soak in all that flavor. Finished with a subtle kiss of cherry wood smoke, this is a crowd-pleasing dish that hits every note.

Steps

  1. Preheat your pellet grill to 350°F using Bear Mountain Cherry pellets.
  2. Prepare the Cheddar Bay biscuit mix according to package directions, mixing in shredded cheddar cheese, milk, and melted butter. Set aside.
  3. Heat a 12-inch cast iron skillet over medium-high heat. Add butter or oil, then cook the ground venison and diced onion until browned and the onion is softened, breaking up the meat as it cooks. Season with salt and pepper.
  4. Add the garlic and cook until fragrant.
  5. Remove from heat and stir in the cheddar soup, cream of mushroom soup, milk, and shredded cheddar cheese. Mix until fully combined and creamy, then spread evenly in the skillet.
  6. Drop spoonfuls of the biscuit mixture evenly over the top of the filling.
  7. Place the skillet on the pellet grill and cook for 40–45 minutes, until the biscuit topping is golden brown and cooked through. If the top browns too quickly, loosely cover with foil. If needed, increase heat slightly at the end to finish browning.
  8. Remove from the grill and let rest for 5–10 minutes.
  9. While resting, prepare the biscuit topping butter according to the mix instructions and brush over the biscuits. Garnish with fresh parsley if desired, then serve.

Filling

  • 1 TBSP butter or oil 
  • 1½ lbs ground venison 
  • 1 yellow onion, diced 
  • ½ TSP salt 
  • ½ TSP black pepper 
  • 1 TBSP garlic, chopped 
  • 1 (10.5 oz) can condensed cheddar soup 
  • 1 (10.5 oz) can condensed cream of mushroom soup 
  • ½ cup milk 
  • 1½ cups shredded cheddar cheese 


Topping

  • 1 box Cheddar Bay Biscuit mix 
  • ½ cup shredded cheddar cheese 
  • 2 cups milk 
  • ¼ cup butter, melted (plus more for seasoning packet) 
  • Fresh parsley, chopped (optional)
