Venison Big Mac Nachos

Jennifer Danella brings wild game to the party with seasoned ground venison, melty cheddar, shredded lettuce, pickles, and a creamy burger sauce that ties it all together. Game day just got a serious upgrade.

Steps

  1. Preheat your pellet grill to 350°F using Bear Mountain Chef’s Choice pellets.
  2. In a small bowl, combine all burger sauce ingredients. Mix well and refrigerate until ready to use.
  3. In a skillet over medium heat, brown the ground venison. Drain excess fat if needed, then stir in Worcestershire sauce, salt, onion powder, garlic powder, smoked paprika, and black pepper. Add a few splashes of water to keep the mixture moist, stir, and remove from heat.
  4. Line a large baking sheet with parchment paper. Add a layer of tortilla chips, followed by half the shredded cheese, half the seasoned venison, and half the diced onion. Repeat with another layer of chips, cheese, venison, and onion.
  5. Place the nachos on the pellet grill and cook for 10–15 minutes, or until the cheese is fully melted.
  6. Remove from the grill and top with diced pickles, shredded lettuce, and a drizzle of burger sauce. Garnish with sesame seeds if desired. Serve immediately.

Ingredients:

  • Bear Mountain BBQ Chef's Choice Pellets
  • 1 lb. ground venison
  • 1 TBSP Worcestershire sauce
  • 1 TSP salt
  • 1 TSP onion powder
  • 1 TSP garlic powder
  • 1 TSP smoked paprika
  • ½ TSP black pepper
  • 1 party-size bag tortilla chips
  • 2 cups shredded cheddar cheese, divided (or substitute queso)
  • ½ white onion, finely diced, divided
  • ½ cup pickle chips, finely diced
  • 1 cup shredded lettuce
  • Sesame seeds, for garnish (optional)


Burger Sauce

  • ¼ cup plain Greek yogurt
  • 2 TBSP mustard
  • 1 TBSP ketchup
  • 1 TBSP dill pickle juice
  • 2 TSP white vinegar
  • 1 TSP smoked paprika
