This one’s for the “tri-tip can’t do low and slow” crowd 😂 Don’t knock it till you try it. When ambassador Tony Ramirez takes a well-marbled tri-tip and treats it like brisket, it transforms into something completely different—rich, tender, and packed with smoky BBQ flavor.

Steps

  1. Cut the tri-tip into evenly sized cubes. Lightly coat with olive oil and season generously with Cajun Honey Rub.
  2. Set up your grill for indirect cooking at 250°F using charcoal and Bear Mountain Hickory wood chunks for smoke.
  3. Place the cubed tri-tip on the grill and cook for about 3 hours, or until the internal temperature reaches around 180°F and a bark has formed.
  4. Transfer the burnt ends to a foil pan. Add butter, BBQ sauce, and an additional sprinkle of seasoning. Toss to coat, then cover tightly with foil.
  5. Increase the grill temperature to 275–300°F and return the pan to the grill. Cook until the burnt ends are probe tender and reach about 205°F internal.
  6. Remove from the grill, rest briefly, and serve warm.
