Stuffed Puff Pastry with Smoked Brie and Raspberry Jalapeño Jam

Servings: 4-6 servings
Ingredients:
· 1 (8.5 oz.) wheel of brie
· ¼ C raspberry jalapeno jam (sub with favorite jelly or jam if desired)
· 1 puff pastry sheet, thawed
· 1 egg + a splash of heavy cream, mixed
Procedure:
1. Preheat the grill to 425 degrees. Meanwhile, make a hole in the center of the brie large enough to add filling (I used an apple corer, but a knife works just fine). Place the brie in the middle of the puff pastry sheet and stuff with the jam. Make sure to apply a layer of jam on top of the brie as well for good measure. Fold the corners of the puff pastry over the stuffed brie, tucking any excess dough underneath.
2. Brush the stuffed pastry with the egg wash. This will help develop a golden-brown crust.
3. Once the grill has preheated, place the puff pastry on the grill and cook for about 30 minutes or until the golden-brown crust previously discussed has been achieved (place parchment paper or a baking sheet underneath the puff pastry prepared with oil to prevent it from sticking).
4. Allow the brie to rest for about 5 minutes, then cut into the middle with a knife. At this point, the cheese will ooze out and be ready to eat. Serve with crackers & enjoy!
