Sonoran Style Hot Dogs
Ingredients
- 6 hot dogs
- 6 slice of thin cut bacon
- 6 bolillo buns
- 1 cup refried beans
- 1/4 cup diced avocado
- 1/4 cup diced red onion
- 1/4 cup diced tomato
- 1/4 cup pickled jalapenos
- 1/4 cup rough chopped cilantro
Zesty Lime Mayo
- 1/4 cup mayonnaise
- 1 tablespoon hot sauce
- 1 tablespoon fresh lime juice

1 teaspoon kosher salt
- Wrap each hot dog tightly with one slice of bacon
- Using Pecan or Gourmet pellets, grill over medium heat until the bacon gets crispy and the hot dog is cooked all the way through.
- To assemble, split the top of a bolillo bun then smear on refried beans to the bottom of the bun.
- Place your bacon wrapped hot dog into the bun and top with diced avocado, diced red onion, diced tomato, pickled jalapeños and cilantro. Then finish with a drizzle of zesty lime mayo on top.
Zesty Lime Mayo
Whisk together mayonnaise, hot sauce, kosher salt, and lime juice together.
