Sonoran Style Hot Dogs

Sonoran Style Hot Dogs
  • 6 hot dogs
  • 6 slice of thin cut bacon 
  • 6 bolillo buns 
  • 1 cup refried beans
  • 1/4 cup diced avocado 
  • 1/4 cup diced red onion
  • 1/4 cup diced tomato
  • 1/4 cup pickled jalapenos 
  • 1/4 cup rough chopped cilantro 
Zesty Lime Mayo
  • 1/4 cup mayonnaise 
  • 1 tablespoon hot sauce 
  • 1 tablespoon fresh lime juice
  • 1 teaspoon kosher salt 

  1. Wrap each hot dog tightly with one slice of bacon 
  2. Using Pecan or Gourmet pellets, grill over medium heat until the bacon gets crispy and the hot dog is cooked all the way through. 
  3. To assemble, split the top of a bolillo bun then smear on refried beans to the bottom of the bun.
  4. Place your bacon wrapped hot dog into the bun and top with diced avocado, diced red onion, diced tomato, pickled jalapeños and cilantro. Then finish with a drizzle of zesty lime mayo on top. 

Zesty Lime Mayo

Whisk together mayonnaise, hot sauce, kosher salt, and lime juice together.
