Smoky Citrus Garlic Chicken Skewers

Bright citrus, bold garlic, and a buttery hot honey glaze come together in these smoky chicken skewers from ambassador Miguel Raya. Cooked over cherry wood for a mild, slightly sweet smoke, they finish juicy, caramelized, and packed with flavor in every bite.

Steps

  1. In a bowl, combine the chicken with olive oil, lime juice, garlic, chili powder, paprika, salt, and pepper. Toss until evenly coated.
  2. Thread the chicken onto skewers.
  3. Preheat your smoker to 300°F using Bear Mountain Cherry pellets.
  4. Place the skewers on the smoker and cook for 10 minutes, then flip.
  5. While the chicken cooks, melt the butter and mix with honey, hot sauce, and lime juice to create the glaze.
  6. Brush the glaze over the skewers during the final minutes of cooking and continue cooking until the chicken reaches an internal temperature of 165°F.
  7. Remove from the smoker and finish with fresh parsley and an extra squeeze of lime. Serve warm.

Ingredients:

  • 2 lbs chicken breast, sliced thin 
  • 2 TBSP olive oil 
  • Juice of 1 lime 
  • 3 cloves garlic, minced 
  • 1 TSP chili powder 
  • 1 TSP paprika 
  • 1 TSP salt 
  • ½ TSP black pepper 


Glaze

  • 4 TBSP butter 
  • ¼ cup honey 
  • ¼ cup hot sauce 
  • Juice of 1 lime
