Smoked Trout with Garlic Dill Butter
This recipe celebrates the daily catch and serves up a rich buttery flavor to compliment the light and delicious fresh trout. Add some grilled potatoes and a simple salad for the perfect meal.
Prep Time: 30 minutes
Cook Time: Approx. 1 hour
Ingredients:
- 2-3 Whole Trout
- 1 tsp Salt
- 1 tsp coarse cracked black pepper
- 1 tsp fresh chopped dill
- 2 fine diced garlic cloves
- 2 Tbsp Butter
- 1 Tbsp Olive Oil
Preparation:
- Clean trout, remove the head and remove all bones as best you can. Click here for video on how to prep your fish.
- With the trout clean and ready, lay the fish on with the skin side down and brush a light layer of olive oil. Then sprinkle a ½ tsp of salt and ½ tsp of pepper to taste.
- In a saucepan over low heat, combine butter, olive oil, garlic, dill and a pinch of black pepper. Heat on low for 10 minutes to allow butter to melt and flavors to come together.
- Start your grill and set temp to 225-degrees. When up to temp, place the fish on the grill, skin side down.
- Cook for about 30 minutes with the grill lid closed. Brush on about ¼ of the butter mixture then close the grill. Brush on more of the butter mixture every 10-15 minutes until the fish is cooked through.
- Remove from the grill, let’s sit for 5 minutes and serve.
Alternative Smoke ‘Ems™ Preparation:
- On one side of the grill, turn on the burner or fire up your charcoal and place the Smoke ‘Ems packet directly over the heat until it starts smoking.
- Place the fish skin side down over low heat and Cook for about 30 minutes with the grill lid closed. Brush on about ¼ of the butter mixture then close the grill. Brush on more of the butter mixture every 10-15 minutes until the fish is cooked through.
- Remove from the grill, let’s sit for 5 minutes and serve.
