Smoked Spinach Artichoke Dip

Creamy, cheesy, and made for the Big Game, this smoked spinach artichoke dip classic by Bear Mountain BBQ ambassador Brian Gerwig brings comfort food to the smoker. Cooking it over Bear Mountain Tailgating Blend pellets adds a balanced, wood-fired flavor and beautiful color you just can’t get from the oven.

Steps

  1. Add the cream cheese, sour cream, mayonnaise, spinach, chopped artichoke hearts, and Parmesan cheese to a cast iron skillet. Mix until well combined. If using, add the BBQ rub now or during the cook.
  2. Preheat your smoker to 350°F using Bear Mountain BBQ Tailgating Blend pellets.
  3. Place the skillet on the smoker and cook for 45 minutes, stirring every 15 minutes, until the dip is melted, bubbly, and fully heated through.
  4. Remove from the smoker and serve immediately. For an extra golden finish, top with fresh grated Parmesan and place under the broiler for a couple of minutes before serving.

  • 2 (8 oz) blocks cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup spinach
  • 2 (14 oz) cans artichoke hearts, drained and chopped
  • 2 cups Parmesan cheese, grated
  • 1½ TBSP BBQ rub (optional)
  • Fresh grated Parmesan cheese, for topping (optional)
