Steps
- In a large bowl, combine the ground beef, shredded cheddar cheese, and burger seasoning until evenly mixed.
- Press the burger mixture firmly into the empty cardboard tray from the slider rolls to create an even slab.
- Carefully remove the burger slab from the tray and place it onto a wire rack.
- Preheat your smoker to 250°F using Bear Mountain Gourmet Blend pellets.
- Smoke the burger for about 90 minutes, or until it reaches an internal temperature of 150°F.
- While the burger cooks, combine all of the pimento cheese ingredients in a bowl and mix until smooth. Refrigerate until ready to serve.
- Cook the bacon in a skillet until crispy. Drain and crumble.
- Toast the slider rolls if desired.
- Slice the smoked burger into portions that fit the slider buns.
- Spread chipotle mayo on the buns, then layer with the smoked burger, crispy bacon, and a generous scoop of pimento cheese.
- Place the tops on the buns, slice into individual sliders, and serve immediately.

- 2 lbs. ground beef
- 2 cups shredded cheddar cheese
- 2 TBSP burger seasoning
- Slider rolls
- Chipotle mayo
- Bacon, cooked and crumbled
Pimento Cheese
- 1 (8 oz) block cream cheese, softened
- 2 cups shredded cheddar cheese
- 4 oz diced pimentos
- ¼ cup pickled jalapeños, chopped
- ½ cup mayonnaise
- ½ TSP onion powder
- ½ TSP garlic powder
- ½ TSP salt
- ½ TSP black pepper
- ½ TSP cayenne pepper
- ½ TSP smoked paprika
