Steps

  1. Fill your hopper with Bear Mountain’s Bold Blend pellets and preheat to 225°F.
  2. Take out the cream cheese and score in a crosshatch pattern. Season thoroughly with a salt, pepper, garlic-based rub and place on the grill for about 1 ½ hours to take on a smoky flavor.
  3. Remove from grill once cooked and add to a bowl with shredded cheddar, mayonnaise, pimentos, garlic and paprika. Mix until well combined. Top with chives to garnish and serve with your favorite crackers.
  4. Enjoy!

Ingredients:

  • 8 oz. cream cheese – chilled
  • 1 tbsp salt, pepper, garlic rub of your choice
  • 2 cups cheddar cheese – shredded
  • 1/3 cup mayonnaise
  • 1 (4oz.) jar of pimentos – drained and diced
  • 1 Tsp minced garlic
  • 1 Tsp paprika
  • Chives – garnish
