These Smoked Oklahoma Smashburgers by Brian Gerwig start with a quick kiss of smoke before hitting the griddle for that signature smashburger crust. The result is juicy beef with crispy edges, caramelized onions, and melty American cheese—all layered with subtle wood-fired flavor.

Steps

  1. Divide the ground beef into 3 oz balls and place them on a wire rack.
  2. Preheat your smoker to 185°F using Bear Mountain Gourmet Blend pellets. This blend of hickory, cherry, oak, and maple delivers balanced smoke and great color.
  3. Place the rack of burger meatballs on the smoker and cook for about 35 minutes, allowing the meat to absorb a light layer of smoke.
  4. Remove the meatballs from the smoker and place them onto a hot griddle.
  5. Top each meatball with thinly sliced onions and smash firmly using a spatula until the patties are very thin. Season with your favorite burger rub.
  6. Cook until a deep crust forms, then flip the burgers and add a slice of American cheese.
  7. Once the cheese has melted, remove the patties and assemble your burgers on toasted buns with your favorite toppings.
  8. Serve immediately and enjoy.
