Steps

  1. In a large bowl, combine ground beef, eggs, breadcrumbs, Parmesan, parsley, garlic, salt, pepper, and buttermilk. Mix gently until just combined—do not overwork.
  2. Portion the mixture into large meatballs. Press a cube of mozzarella into the center of each and seal completely around the cheese.
  3. Preheat smoker to 250°F using Bear Mountain Gourmet Blend pellets. Place meatballs on a lightly oiled rack and smoke for 60–75 minutes, until they develop a deep color and reach about 150°F internal temperature.
  4. While meatballs smoke, heat olive oil in a large pot over medium heat. Add garlic and cook until fragrant. Stir in crushed tomatoes, whole tomatoes (crushing by hand), salt, and red pepper flakes. Simmer for 30–45 minutes.
  5. Transfer smoked meatballs directly into the sauce. Simmer gently for 30–45 minutes, until fully cooked and tender.
  6. Toast sub rolls lightly if desired. Fill with meatballs and sauce, finish with basil, Pecorino Romano, and a drizzle of olive oil. Secure with toothpicks if serving for a crowd.

  • 2 lb. ground beef (80/20 recommended)
  • 2 large eggs
  • 2 cups Italian breadcrumbs
  • 1 cup finely grated Parmesan or Pecorino Romano
  • ½ cup finely chopped fresh parsley
  • 4 cloves garlic, finely minced or grated
  • 2 TSP kosher salt
  • 1 TSP freshly ground black pepper
  • 8 oz low-moisture mozzarella, cut into 16 cubes
  • 8 oz buttermilk
