Smoked Ham with Maple Brown Sugar Glaze

Sweet, smoky, and irresistibly caramelized, this spiral ham from Bear Mountain ambassador Jordan Hanger is glazed with a maple–orange mixture that melts into every slice for the perfect holiday centerpiece.

Steps

  1. Preheat your smoker to 225–250°F.
  2. Apply a thin layer of Dijon mustard to the ham as a binder, then coat evenly with BBQ rub.
  3. Place the ham in the smoker and cook until it reaches an internal temperature of 130°F.
  4. While the ham smokes, make the glaze: combine orange juice, maple syrup, brown sugar, cinnamon, and cayenne in a small pot over medium heat. Bring to a boil, then reduce to low and simmer for 30 minutes, until thickened. (If you need it thicker, whisk in 1-2 tbsp of powdered sugar) 
  5. Once the ham reaches 130°F, brush a generous layer of glaze over the entire surface. Increase smoker temperature to 350°F.
  6. Continue cooking until the ham reaches an internal temperature of 145°F.
  7. Remove from the smoker and rest for 10 minutes before slicing.
  8. Serve with extra glaze, if desired.

Orange Maple Glaze:

  • ½ cup orange juice
  • ¼ cup maple syrup
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp cayenne
