Smoked French Onion Meatloaf

Bear Mountain ambassador Michael Duarte has done it again with the perfect Smoked French Onion Meatloaf recipe. This cheesy, savory, perfect bite will have you coming back for more.

Steps

  1. In a pan over medium to high heat, sauté and caramelize chopped onions with 3 tablespoons of butter, 3 tablespoons of worcestershire sauce, and salt for about 20 minutes then set aside. 
  2. Mix ground beef, panko, 3 tablespoons of worcestershire sauce, eggs, Italian seasoning, smoked paprika, salt, and pepper. 
  3. Form your meatloaf and create a pocket in the center to add in your caramelized onions and shredded gruyere cheese. Top with the meat mixture and add more cheese and onion to the top. 
  4. Place in the smoker at 350°F and smoke until the internal temperature reaches 160°F. (approx. 1 ½ hours) 
  5. Top with parsley and gravy. 

Ingredients:

  • 5 lbs. ground beef
  • 2 cups panko bread crumb
  • 4 yellow onions
  • 5 tbsp butter
  • 6 tbsp worcestershire sauce
  • 2 eggs
  • 2 tbsp Italian seasoning
  • 2 tbsp smoked paprika
  • 4 garlic cloves
  • 1 lb. gruyere cheese
  • 2 tbsp flour
  • 1 cup beef stock
  • 2 tbsp salt
  • 2 tbsp pepper
