Steps
- Preheat your smoker to 275°F.
- Spread the shredded pulled pork evenly in a cast iron skillet. Pour the pickle juice, stone-ground mustard, and heavy cream over the pork, then add ½ cup of the diced ham and the BBQ dry rub. Stir gently to combine.
- Place the skillet on the smoker and cook for about 2 hours, stirring occasionally, until the sauce has been absorbed into the pork.
- Top the pork with the Swiss cheese, remaining diced ham, and dill pickle chips.
- Increase the smoker temperature to 375°F and return the skillet to the smoker for about 15 minutes, until the cheese is completely melted and bubbly.
- Serve on its own, over rice, piled onto soft rolls, or even as a topping for pizza.

- 3 lbs. cooked pulled pork, shredded
- 1 cup diced ham, divided
- 10 slices Swiss cheese
- ⅓ cup stone-ground mustard
- ¾ cup heavy cream
- ¼ cup pickle juice
- 1 cup dill pickle chips
- 1 TBSP BBQ dry rub
