Steps

  1. Using a sharp knife, score the entire bologna chub in a checkerboard pattern about ¼-inch deep.
  2. Coat the bologna with yellow mustard, covering all sides.
  3. Season generously with your favorite BBQ rub, making sure it gets into the scored cuts.
  4. Smoke at 275°F with Bear Mountain BBQ Sportsman's Blend Pellets for about 4 hours.
  5. Remove from the smoker, slice, and serve as-is, on sandwiches, or alongside your favorite BBQ sides.
