Smoked Beer Cheese Dip

Beer, bacon, cheese… and smoke! This ultimate smoked beer cheese dip from Bear Mountain ambassador Brandyn Baker is loaded with crispy bacon, melty cheddar & Monterey Jack, a kick of jalapeño, and a hint of smoky goodness from the smoker. Perfect for pretzel bites, game day, or whenever you need a dip upgrade.

Steps

  1. Add 3 slices of bacon to a skillet over medium heat and cook until it reaches your desired doneness, flipping as needed. Set the bacon aside and dice finely. Remove most of the grease from the pan, leaving some for the rest of the dip.
  2. In the same skillet, melt butter with the remaining bacon fat over medium heat. Add diced onion and jalapeno, cooking until softened. Toss in the garlic, cooking until fragrant.
  3. Stir in the flour until it coats the vegetables evenly. Then, slowly whisk in the beer, allowing it to reduce slightly (3-5 minutes). Pour in the cream and milk, stirring until smooth.
  4. Remove the skillet from the direct heat. Stir in cream cheese until melted, then gradually add shredded cheddar and Monterey Jack, mixing until fully combined.
  5. Season with smoked paprika, cayenne, mustard powder, salt and pepper. Stir in the chopped bacon.
  6. Place the skillet on the smoker uncovered at no higher than 225°F for 20-30 minutes to infuse smoke, stirring halfway through to prevent a film from forming. Once the beer cheese dip is smooth and the cheese has completely melted, remove it from the smoker.
  7. Garnish with chopped parsley or chives and bacon bits if desired and serve warm with pretzel bites. Enjoy!

Ingredients:

  • Bear Mountain BBQ Gourmet Pellets
  • 3 slices of bacon
  • 3-4 tbsp butter
  • ½ sweet onion – diced
  • 1 jalapeno – seeded and finely diced 
  • 4 tbsp all-purpose flour
  • 12oz. amber or brown ale beer (I used Sam Adams or Octoberfest)
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 tbsp minced garlic
  • 7oz. sharp cheddar cheese – shredded
  • 5oz. Monterey Jack cheese – shredded
  • 2oz. cream cheese – cubed
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • ½ tsp mustard powder
  • salt & pepper to taste
  • parsley or chives to garnish
  • pretzel bites for serving
