Smoked BBQ Chicken Halves

We’re big fans of BBQ chicken and this delicious recipe is a surefire way of creating the most insanely delicious, juicy smoked chicken.
Steps
- Spatchcock your chicken by using a knife or kitchen shears to cut out and remove the spine of your chicken. Flip chicken over and cut down the back to make two halves.
- Season liberally with your favorite BBQ rub, we used Meat Church Holy Gospel.
- Place in a smoker at 275°F for 1.5 hours.
- Pull chicken off smoker and wrap in tinfoil with the chicken on top of the two halves of butte. Place chicken back in the smoker wrapped at 275°F for 1.5 hours.
- Remove chicken from the smoker once you’ve reached an internal temp of 165°F.
- Season your chicken with your BBQ rub, coat in BBQ sauce of your choice (we used Meat Mitch WHOMP! Naked BBQ Sauce) and place back on the smoker unwrapped for 15 minutes to let that sauce tack up.
- Remove and enjoy!
