Steps
- Preheat your smoker to 275°F. Toss the bacon with the brown sugar and cinnamon until evenly coated, then arrange the slices on a wire rack.
- Place the bacon on the smoker and cook for about 1 hour. Remove and immediately sprinkle with flaky salt. Allow to cool before chopping.
- Melt the butter in a large cast iron skillet over medium heat. Stir in the brown sugar, rum, vanilla, and cinnamon. Bring the mixture to a low boil, stirring until smooth and caramelized.
- Remove the skillet from the heat and add the sliced bananas. Spoon the warm glaze over the bananas, then place the skillet on the smoker.
- Cook for 20–25 minutes, occasionally basting the bananas with the caramelized glaze.
- Serve the warm Bananas Foster over vanilla ice cream. Top with extra glaze, chopped walnuts, chopped candied bacon, a drizzle of hot honey, and a whole slice of candied bacon.

Candied Bacon
- 6 slices thick-cut bacon
- ½ cup brown sugar
- 1 TSP cinnamon
- Flaky salt, for finishing
Bananas Foster
- 4 bananas, sliced
- 8 TBSP salted butter
- 1 cup brown sugar
- 1 TSP kosher salt
- 3 TBSP rum
- ½ TSP cinnamon
- 1½ TSP vanilla extract
- ¼ cup coarsely chopped walnuts
For Serving
- Vanilla ice cream
- Hot honey
- Extra walnuts
- Chopped candied bacon
