Smoked Apple Whiskey Pork Tacos
You’ve got to try these Smoked Apple Whiskey Pork Tacos, created by the talented Bear Mountain ambassador Merry Graham. The tender smoky pork, crunchy apple pico and creamy salsa verde sour cream will have your fans cheering at every bite!

Serves: 4-6
Ingredients:
- 2 pork tenderloins
- 2 tbsp canola oil
- 15 taco shells or lettuce boats
- Queso fresco
- Scallions
- Shredded lettuce
- Bear Mountain Smoked Apple Whiskey Wood pellets, available exclusively at Walmart
The Rub:
- 3 tbsp pork rub
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp ground clove
Apple Jalapeño Pico:
- 2 green apples, diced 1/4-inch
- 1 tbsp lemon juice
- 2 jalapeños, minced
- 1/4 cup minced cilantro
- 1 tbsp agave
Sour Cream:
- 1 cup sour cream
- 1/2 cup salsa verde
- 1/4 cup minced green onion
- 1/4 cup minced cilantro
- 1 tbsp lemon juice
- Salt
Instructions:
- Trim silver skin from pork and drizzle with oil.
- Combine pork rub, brown sugar, cinnamon and ground clove. Rub on all sides of pork.
- Set grill or smoker to 250°F. Fill it with Bear Mountain Apple Whiskey pellets.
- Place pork on the grill or smoker for 50-60 minutes until internal temp is145°F. Take if off the grill or smoker and let it rest. Then chop and salt to taste.
- Toss diced apples, lemon juice, jalapeños, cilantro and agave.
- Combine sour cream, salsa verde, green onion, cilantro, lemon juice and salt in a separate bowl.
- Fill taco shells, or lettuce boats, with lettuce and sour cream, chopped pork and apple pico.
- Serve and enjoy!
