Savory Funnel Cake with Spicy Rib Bites

Smoky rib bites meet crispy golden funnel cake, all brought together with a drizzle of tangy gochujang mayo, scallions, and furikake. Cooked over Bear Mountain’s Tailgating pellets, this dish delivers layers of sweet, spicy, and savory flavor in every bite—a show-stopping recipe that proves funnel cake isn’t just for dessert anymore.

Steps

  1. Cut the boneless country rubs into 1-inch bites and marinate with BBQ sauce and half of your dry rub for at least 3 – 4 hours, preferably overnight.
  2. Once you’re ready to cook, fire up your smoker to 275°F and place the rib bites onto a wire rack and into your smoker for 2 hours. Spray lightly with water every hour. 
  3. Transfer the pork bites into an aluminum pan and add soy sauce, Sriracha, honey, butter, and chili crisp. Cover and cook for one more hour, then remove the foil and let cook for another 15-20 minutes to allow the sauce to thicken. 
  4. To make the funnel cake, heat up a 10-inch pot with oil about 2 – 3 inches high to a temperature of 375°F. 
  5. Combine all ingredients in a bowl and whisk until smooth. Pour liquid into a funnel or a wide mouth squeeze bottle. 
  6. Once the oil is hot, squeeze the funnel cake batter in a quick zigzag and circle motion, making sure to cover the entire surface of the oil using about one cup of the batter. Let it cook for about 3 to 4 minutes until golden, lightly press it down with a strainer until the funnel cake has set. 
  7. Flip the funnel cake carefully using tongs and the strainer and cook for three more minutes until golden on both sides then carefully remove and sit on a wire rack to drain and cool.
  8. Take the finished funnel cake and top it with the spicy mayonnaise, scallions, and furikake then top with pork bites, and repeat garnish again. 

Ingredients:


For the funnel cake:

  • 2 large eggs
  • 1 cup flour
  • 1 cup evaporated milk
  • 2 tsp spicy BBQ rub
  • 2 tbsp sugar
  • 2 tbsp kimchi juice (optional)


For the pork bites:

  • 2 lbs. boneless country ribs
  • ¼ cup Asian BBQ sauce
  • 2 tbsp BBQ dry rub
  • ½ stick butter
  • 3 tbsp low sodium soy sauce
  • 3 tbsp Sriracha
  • 2 tbsp honey
  • 1 tbsp chili crisp (optional)


For the gochujang mayonnaise:

  • ¾ cup mayonnaise
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp fish sauce
  • 2 tsp honey
  • 2 tbsp gochujang
  • ¼ cup sparkling lime water
