Steps
- Place the pork butt in a large food-safe container or bag and pour the 2-liter bottle of root beer over it. Cover and refrigerate for 24 hours, turning the pork once or twice if needed.
- Remove the pork from the marinade and discard the root beer. Pat the pork completely dry, then generously coat all sides with BBQ rub.
- Preheat your smoker to 250°F. Place the pork directly on the grates and smoke until a deep bark forms and the internal temperature reaches 165–175°F, about 5–6 hours.
- Transfer the pork to a large foil pan or wrap tightly in heavy-duty foil. Add ½ cup fresh root beer, butter, and brown sugar, then seal tightly.
- Return the wrapped pork to the smoker and continue cooking at 250°F until it reaches 200–205°F and a probe slides into the meat with very little resistance.
- Remove from the smoker and keep wrapped. Rest for at least 1 hour, preferably 1–2 hours.
- Remove the bone and shred the pork. Toss with some of the reserved juices and BBQ sauce, if desired.
