Pork Tenderloin Cordon Bleu

A smoky twist on a French classic.  

Prep time: 20 mins
Cook time: 1-2 hrs *depending on size

Ingredients:

  • 1 trimmed pork tenderloin
  • 3-4 pieced of thinly sliced ham
  • 1/3 cup grated smoked provolone
  • 2 Tbls stone-ground mustard
  • 1 tsp mayonnaise
  • 1 tsp salt
  • 1 tsp ground black pepper

Preparation: 

  1. Start your grill and set temp to 250° 
  2. Roll cut the tenderloin so the meat lays flat. Cover with waxed paper and pound the tenderloin down to 1/2" thick.  Not sure how - check out this video
  3. Coat the flattened tenderloin with 1 Tbls mustard and the mayonnaise
  4. Sprinkle the grated cheese evenly across the top then lay the ham evenly on top of the cheese
  5. Roll up the tenderloin back into a log and use butchers twine to tie in 3 places along the tenderloin
  6. Rub the outside of the tenderloin with 1 Tbls mustard and evenly coat with the salt and pepper
  7. Place on the grill and smoke until the internal temp reaches 120° then turn up the temperature to high and cook to an internal temp of 145°
  8. Remove from the grill, rest the meat for 10 minutes, slice and serve
