Pork Tenderloin Cordon Bleu
A smoky twist on a French classic.
Prep time: 20 mins
Cook time: 1-2 hrs *depending on size
Ingredients:
- 1 trimmed pork tenderloin
- 3-4 pieced of thinly sliced ham
- 1/3 cup grated smoked provolone
- 2 Tbls stone-ground mustard
- 1 tsp mayonnaise
- 1 tsp salt
- 1 tsp ground black pepper
Preparation:
- Start your grill and set temp to 250°
- Roll cut the tenderloin so the meat lays flat. Cover with waxed paper and pound the tenderloin down to 1/2" thick. Not sure how - check out this video
- Coat the flattened tenderloin with 1 Tbls mustard and the mayonnaise
- Sprinkle the grated cheese evenly across the top then lay the ham evenly on top of the cheese
- Roll up the tenderloin back into a log and use butchers twine to tie in 3 places along the tenderloin
- Rub the outside of the tenderloin with 1 Tbls mustard and evenly coat with the salt and pepper
- Place on the grill and smoke until the internal temp reaches 120° then turn up the temperature to high and cook to an internal temp of 145°
- Remove from the grill, rest the meat for 10 minutes, slice and serve
