Steps

  1. Remove the skin from the pineapple and season all sides with BBQ dry rub.
  2. Place the pineapple, jalapeños, bacon, and cream cheese on separate trays. Season the jalapeños, bacon, and cream cheese lightly with additional BBQ rub.
  3. Preheat your smoker to 325°F. Place everything on the smoker and cook for about 1 hour, until the bacon is crispy, the jalapeños are softened, and the cream cheese is warmed through.
  4. Drizzle the pineapple with sweet Thai chili sauce and return it to the smoker for 20–30 minutes, until caramelized and tender.
  5. Remove everything from the smoker. Chop the pineapple, jalapeños, and bacon into small pieces.
  6. In a large bowl, combine the chopped ingredients with the softened cream cheese and mix until fully incorporated.
  7. Transfer to a serving dish and garnish with scallions, a drizzle of sriracha, and extra pineapple if desired.
  8. Serve warm and enjoy.

  • 1 TBSP sriracha
