Steps
- Combine the soy sauce, sesame oil, sriracha, and BBQ rub. Toss with the chicken thighs, cover, and refrigerate for at least 1 hour or overnight.
- Preheat your smoker to 250°F. Smoke the chicken for about 1 hour, until it reaches approximately 155°F internally.
- Transfer the chicken to an aluminum half pan. Add the pineapple and juice, pickled Fresno chilies, BBQ sauce, sriracha, and brown sugar.
- Increase the smoker temperature to 325°F. Cover the pan tightly with foil and cook for about 1 hour, until the chicken is tender and reaches at least 165°F.
- Shred the chicken in the pan and stir into the sauce. Add the cooked bacon and return the pan to the smoker uncovered for about 30 minutes, stirring occasionally as the sauce reduces.
- Slice the Hawaiian rolls horizontally, keeping them connected. Place the bottom half in a baking pan and layer with Muenster cheese, pulled chicken, scallions, and another layer of cheese.
- Place the top buns over the filling. Lightly spray with cooking oil and sprinkle with sesame seeds, if desired.
- Return the sliders to the smoker at 325°F for about 15 minutes, until the cheese melts and the buns are lightly toasted.
- Remove from the smoker, slice into individual sliders, and serve warm.
