Pimento Cheese Jalapeno Poppers with Hot Honey Vinaigrette

Turn up the flavor with these Pimento Cheese Jalapeño Poppers from Bear Mountain BBQ ambassador Brandyn Baker. Jalapeños are stuffed with creamy, smoky pimento cheese, wrapped in crispy bacon, and kissed with rich wood-fired flavor from Bear Mountain BBQ Tailgating pellets. Finished with a drizzle of hot honey vinaigrette, every bite hits the perfect balance of spicy, cheesy, smoky, and sweet.

Steps

  1. Preheat your grill or smoker to 275°F. Meanwhile, halve your jalapenos lengthwise and remove the seeds and the membranes.
  2. Fill each jalapeno half generously with pimento cheese, then wrap each filled jalapeno with a half slice of bacon, securing with a toothpick if necessary.
  3. Place the poppers on a wire rack and season liberally with your favorite BBQ seasoning.
  4. Transfer the wire rack to the grill and let the poppers smoke for 1 hour until the bacon is crispy and the jalapenos soften. Once this occurs, remove the poppers from the grill. 
  5. To make the vinaigrette, whisk together hot honey, apple cider vinegar, Dijon mustard, olive oil, and salt until emulsified. Note: You can use a blender as well to expedite the emulsion process. 
  6. Arrange the poppers on a platter and drizzle lightly with hot honey vinaigrette just before serving. 
  7. Serve with extra vinaigrette on the side for dipping and enjoy!

Ingredients:

  • 8 large jalapenos – halved lengthwise and seeds/membranes removed
  • 1 cup pimento cheese – store bought or homemade 
  • BBQ seasoning
  • 16 slices of bacon
  • ½ cup hot honey
  • ¼ cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 2 tbsp mayonnaise
  • pinch of salt
  • Bear Mountain BBQ Tailgating Pellets
