Steps
- Cut the pork belly into 2-inch strips, then cut each strip into 2-inch cubes. Place the cubes on a wire rack.
- Coat the pork belly with yellow mustard as a binder, then season generously on all sides with your favorite BBQ rub.
- Preheat your smoker to 250°F using Bear Mountain Cherry Pellets. Place the pork belly on the smoker and cook for 3 hours, spritzing lightly with Dr. Pepper every 30 minutes.
- Once the bark has set, transfer the pork belly cubes to a foil pan. Add maple syrup, butter, brown sugar, and BBQ sauce, making sure the pork is well coated.
- Cover the pan tightly with aluminum foil and return it to the smoker for 1 hour.
- Remove the foil for the final 15 minutes to allow the sauce to thicken and become sticky and caramelized.
- Continue cooking until the pork belly reaches an internal temperature of approximately 200°F and is tender.
- Remove from the smoker and let cool for 5–10 minutes before serving warm.
