Steps

Make your kimchi ranch by blending kimchi, sour cream, and Kewpie mayo. Stir in chives and place in refrigerator.
Season wings with your favorite all-purpose rub.
Preheat smoker to 350F using Bear Mountain BBQ Gourmet pellets. (Pecan or Oak are also great choices)
Place wings on the grill at 350F, grilling both sides until an internal temperature of 180F. Typically this takes 20-30 minutes depending on direct vs. indirect heat.
While your wings cook, make your Korean Buffalo sauce.
To a saucepan add butter, gochujang, hot sauce, rice vinegar, fish sauce, garlic, and cayenne pepper.
Cook over medium heat until the butter melts and everything is mixed well. (5-10 minutes)
Once your wings are done, coat them in the buffalo sauce.
Serve with your kimchi ranch and enjoy!

Ingredients:

3-4 lbs. Chicken wings
¼ Cup of Kimchi
¼ Cup of Sour cream
¼ Cup of Kewpie mayo
2 TBSP of Chives
½ Cup of Gochujang
¼ Cup of Hot sauce
2 TBSP of Rice vinegar
1 TBSP of Fish sauce
1 TBSP of Garlic
1 Tsp of Cayenne
1 ½ Sticks of Butter
