Korean BBQ St. Louis Ribs

Cook time: 4-6 hours
Serves: 1-2
Ingredients:
Rub:
- 3 tbsp salt
- 3 tbsp black pepper
- 2 tbsp Chinese five spice
- 2 tbsp ground ginger
- 1 tbsp ground mustard
- 2 tsp allspice
- 2 tsp coriander
Wrap/glaze:
- ½ cup brown sugar
- 4 tbsp butter
- 2 tbsp Maggi seasoning (can substitute soy sauce)
- ½ cup Korean BBQ sauce
- 1 tbsp honey
- Leftover dry rub
Garnish:
- Sesame seeds
- 2 scallion greens
Smoke:
- Bear Mountain BBQ’s Smoked Apple Whiskey, available exclusively at Walmart
Instructions:
- Turn your grill or smoker to 250° degrees and pour in Bear Mountain’s Smoked Apple Whiskey pellets.
- Remove membrane from the back of the rack of ribs and apply rub, then let it “sweat” in for 20 minutes and repeat on the other side.
- Place the ribs on the grill or smoker and let cook for 2.5 hours.
- Remove and layer all wrap ingredients listed above - this will also serve as your glaze.
- Bump up the temperature on the grill or smoker to 300°.
- Place wrapped ribs back on the grill or smoker for 45-60 minutes meat side down.
- Unwrap and turnover to meat side up.
- Place back on the grill or smoker, using the foil as a “boat” to catch the sauce.
- Using a brush, lightly baste the ribs 2-3 times (every 15 minutes).
- When tender, take off the grill or smoker and let rest.
- Top the ribs with chopped scallions and sesame seeds.
- Enjoy!
