Jalapeno Popper Pig Shots

These irresistible Pig Shots from Bear Mountain ambassador Mike Duarte are the ultimate smoked appetizer — crispy bacon cups stuffed with creamy, smoky goodness. Perfect for game day or backyard get-togethers, they’re easy to prep, fun to make, and deliver a big punch of flavor right off the smoker.

Steps

  1. Fire up the grill to 250°F with Bear Mountain BBQ Red, White, & BBQ pellets.
  2. Cut kielbasa into ½ inch slices and cut bacon strips in half. 
  3. Roll bacon around the kielbasa slices securing with a toothpick.
  4. In a bowl add pimento cheese, cream cheese, BBQ rub, cheddar cheese, 1 chopped jalapeno, bacon pieces, and mix well until combined. 
  5. Add mixture to a plastic bag to make a piping bag and pipe into the pig shots and top with a slice of jalapeno.
  6. Place in the smoker on a wire wrack, or into the oven, at 250°F for about 2 hours or until the bacon is done. 
  7. Top with honey and enjoy!

Ingredients:

  • 12oz. beef smoked kielbasa
  • 1lb. thick cut bacon
  • 12oz. pimento cheese
  • 8oz. whipped cream cheese
  • 1 tbsp BBQ rub
  • 4oz. cheddar cheese
  • 3 jalapeno
  • 2oz. cooked bacon pieces
  • 4 tbsp honey 
  • Bear Mountain BBQ Red, White, & BBQ Pellets
