In & Out BBQ Onion Rings

Makes 12 Onion Rings

Steps

Preheat your smoker to 250°F.
Cut the ends of the onions and slice in the center using the large and small rings to stuff.
Using the onion rings you aren’t stuffing, chop about a cup and sauté in a pan with 2 tablespoons of butter and 1 tablespoon of Worcestershire for about 8 minutes or until soft.
In a bowl, add ground beef, sauteed onions, SPG seasoning, pickles, cheddar cheese, and mix well.
Using the large and small onion rings, stuff the mixture using 2 slices of bacon to wrap and cover the rings.
Season with your favorite BBQ rub and place them on a wire rack and into the smoker for about 1 ½ hours.
Baste with BBQ sauce and top with sesame seeds. Place back onto the smoker for about 15 minutes.
Remove from smoker, dip into the In & Out sauce and enjoy!

Ingredients:

1lb. 80/20 ground beef
6 yellow onions
2 tbsp butter
1 tbsp Worcestershire sauce
2 tbsp salt, pepper, garlic seasoning
½ cup chopped pickles
8 oz. cheddar cheese
24 bacon slices
4 tbsp BBQ rub - Derek Wolf's Sticky Bourbon Brown Ale Rub | Spiceology
6 tbsp BBQ sauce
sesame seeds
Bear Mountain BBQ Maple Bourbon Pecan Pellets

In & Out Sauce:

½ cup mayonnaise
3 tbsp ketchup
2 tbsp sriracha
2 tbsp relish
1 tbsp apple cider vinegar or white vinegar
1 tsp sugar
2 tbsp water – to thin
