Horseshoe Chili Dog Sliders

Big flavor, bold presentation. Ambassador Frank Campanella takes a beef sausage, smokes it until crusty and caramelized, then loads it up with chili, cheddar, and jalapeños over soft Hawaiian rolls. It’s part chili dog, part party platter—and guaranteed to turn heads on game day.

Steps

  1. Score the beef sausage in a checkerboard pattern on both sides using a sharp knife. Brush with yellow mustard and season evenly with BBQ dry rub.
  2. Separate nine slider rolls and cut a V shape into the tops, pressing down slightly to create space for the sausage. Arrange the rolls on a pan in the shape of the sausage.
  3. Preheat your pellet grill to 325°F. Place the sausage on the grill and cook for 35–45 minutes, until it develops a deep crust and is fully cooked.
  4. Transfer the smoked sausage onto the prepared slider rolls, adjusting as needed to fit the horseshoe shape.
  5. Top with hot dog chili sauce, shredded cheddar, and pickled jalapeños. Return to the smoker for about 15 minutes, or until the cheese is melted and bubbly.
  6. Slice into individual sliders and serve. Optional toppings like diced onion or coleslaw add great crunch.

  • 1 can hot dog chili sauce
  • 1 cup shredded cheddar cheese
  • ¼ cup pickled jalapeño slices
  • 1 TBSP yellow mustard
  • 1 TBSP BBQ dry rub
