Steps
- Pat the wings completely dry with paper towels. For extra-crispy skin, dry-brine the wings uncovered in the refrigerator overnight. If skipping the dry brine, toss the wings with 1–2 tbsp cornstarch before seasoning.
- Lightly coat the wings with olive oil, then generously season with the chipotle seasoning, making sure they're evenly coated on all sides.
- Preheat your smoker to 350°F using Bear Mountain Tailgating Blend pellets. Place the wings on the smoker and cook for 45–60 minutes, turning occasionally for even cooking, until they reach an internal temperature of 175°F and the skin is crisp.
- While the wings cook, combine the honey, honey BBQ sauce, butter, and chipotle seasoning in a small saucepan. Heat over low to medium heat, stirring until the butter melts and the glaze is smooth.
- Remove the wings from the smoker and toss them in the warm honey-chipotle glaze until completely coated.
- Serve immediately with carrots, celery, ranch, or your favorite dipping sauce.

- 1½ TBSP paprika
- 1½ TBSP garlic powder
- 1 TBSP onion powder
- 1½ TBSP kosher salt

- 1 TSP cumin
- ½ TSP cayenne pepper, optional

- ½ cup honey
- ½ cup honey BBQ sauce
- 4 TBSP butter
- 2 TSP chipotle seasoning
