Honey Bourbon Chicken Lollipops

Each drumette is trimmed into the perfect handheld bite, then smoked and glazed with a rich, sticky honey bourbon sauce. Sweet, smoky, and just the right amount of bold—these lollipops are guaranteed to steal the show at your next cookout.

Steps

  1. Preheat your smoker to 275°F with Bear Mountain BBQ Chef’s Choice pellets.
  2. Prep your drumsticks by cutting around the leg about 1 inch down from the knuckle. Peel back the knuckle meat and remove any excess tendons and skin. 
  3. Remove the skin from the leg then cut a flat spot on top of the chicken leg. 
  4. Season the chicken with a salt, pepper, garlic blend and your favorite BBQ rub. Tightly wrap in bacon, tucking the end of the bacon into the wrapped portion to avoid it coming apart during the cook.
  5. Place the drumsticks on a wire wrack and into your smoker for 1 hour.
  6. Assemble your honey bourbon glaze by melting butter into a pan and sauté your garlic for 1 minute. Add the remaining ingredients and cook over medium heat for 10 minutes until it begins to bubble. Remove from heat and let it cool in a cup.
  7. Once your chicken reaches an internal temperature of 165°F go ahead and dunk your chicken into glaze and then let them cook until they reach 170°F internal. 
  8. Remove from the grill and dunk them in the glaze once more, then serve and enjoy!

Honey Bourbon Glaze:

  • ½ cup honey
  • 1/3 cup bourbon
  • 3 garlic cloves – minced
  • 2 tbsp butter
  • ½ cup brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire
  • 1 tbsp stone ground mustard
  • 1 tbsp ginger paste
  • 1 tsp red pepper flakes
