Homemade Thin Crust Pizza
This easy yet delicious homemade pizza recipe is brought to you by Justin Goodman of @ElectricMice!
Crust Ingredients:
One can chicken
1 large egg
1oz parmesan cheese
1/2 tablespoon nutritional yeast
1/2 tablespoon almond flour
Toppings:
16 slices pepperoni
1oz fresh mozzarella cheese
1oz shredded mozzarella
2oz RAOs marinara
1/4oz fresh spinach
1/2oz parmesan cheese
Any seasoning you like
Pellets:

Directions:
Preheat smoker to 225°
Drain and press out all of the water from the canned chicken. Then spread the chicken pieces onto a sheet to smoke in your smoker at 225 for 20 minutes or until the chicken appears dry.
Next in a medium bowl mix the parmesan cheese, egg and nutritional yeast and almond flour with the chicken. Mix well, breaking up the chicken as you mix. Pour chicken mixture onto a parchment lined cookie sheet and press flat. You want a very thin crust, so press/roll out as thin as you can without any holes. I aimed for about 1/8 inch.
Smoke/bake at 400° for 20 minutes and remove the cookie sheet. You should now have the crust on the parchment directly on the grill grates.
For the pizza, I layered the sauce, pepperoni, spinach, shredded cheese, fresh cheese and parmesan on the par cooked crust.
Bake another 20 minutes or until cheese is bubbly.
Give that fresh mozzarella a finishing touch with a culinary torch or toss it under a broiler. Enjoy!
