Classic backyard burgers, leveled up. These patties get a slow kiss of smoke before hitting a hot cast iron for a perfect crust. Juicy, cheesy, and stacked with simple toppings—this is how you do burgers right.

Steps

  1. Form the Patties:

    If not purchasing pre-formed from a butcher, hand-form 8 patties at ⅓ lb each from 80/20 ground beef. Do not overwork the meat. Refrigerate until ready to cook.
  2. The Smoke:

    Set the grill to 200°F with Bear Mountain Red, White & BBQ pellets. Pull patties straight from the refrigerator and season both sides with a generous pinch of kosher salt and black pepper immediately before placing on the grill. Smoke until the patties reach 130°F internal, then remove and rest on a wire rack.
  3. The Sear:

    Place a large cast iron skillet or griddle pan inside the smoker and crank the temp to 450°F. Let the pan preheat for 10 minutes. Add beef tallow to the pan, then sear burgers approximately 30 seconds per side to develop a hard crust.
  4. The Cheese:

    After flipping, immediately lay 2 slices of American cheese on each patty and close the lid. Pull once the cheese is warmed through and beginning to melt into the burger but hasn’t fully blown out.
  5. Build and Serve:

    Stack on a toasted bun with iceberg lettuce, a slice of tomato, and a thin ring of red onion. Ketchup and yellow mustard on the side — let people build their own.

  • 8 hand-formed ⅓ lb patties, 80/20 ground beef (sourced from a butcher if possible)
