Grill Dad’s Crispy & Smoky Wings

These wings get their edge from Bear Mountain’s Tailgating BBQ Blend. The mix of hickory, maple, and cherry lays down a smoky foundation with just enough sweetness to balance the heat. It’s the perfect combo for wings that finish crisp, juicy, and loaded with game-day flavor.

Steps

  1. Dry brine the wings by seasoning with 4 parts salt, 2 parts pepper, and one part garlic powder. Then set in the refrigerator for 24 hours.
  2. Heat your smoker to 225°F with Bear Mountain Tailgating BBQ pellets. Place the wings on the grill and smoke until they reach a temperature of about 170°F internal. 
  3. Remove the wings from the smoker and let them rest while you crank the heat to 500°F. The wings should be out for about 20 minutes total. 
  4. Lightly spray the wings with ghee or tallow.
  5. Using a small mesh strainer, dust just the skin side with the starch blend. (Think powdered sugar technique, very light and even)
  6. Return the wings to the smoker and cook at 500°F until the skin crisps, about 5-7 minutes. 
  7. While the wings crisp, make your sauce. In a small saucepan, melt butter over low heat then whisk in Frank’s Red Hot sauce and honey until smooth and glossy.
  8. Toss the hot wings in the honey buffalo sauce and serve right away!

  • 3-4 lbs. chicken wings
  • Kosher salt
  • pepper
  • garlic powder
  • ghee or beef tallow
  • 1 tbsp cornstarch
  • 1 tbsp potato starch 
  • 1 cup Frank’s Red Hot
  • 4 tbsp unsalted butter
  • 2 tbsp honey
