Pat a rack of baby back ribs dry with a paper towel on both sides
Remove the membrane from the ribs
Spread mustard all over the ribs to act as a binder for the seasoning
Season the ribs liberally on both sides with your favorite BBQ rub. Let the meat rest for about 30 minutes before placing it on your smoker.
Cook at 275F for 2 hours.
Prep your foil to wrap the ribs by laying down two equal sheets of heavy-duty aluminum foil on top of each other. Sprinkle a half cup of brown sugar on top of the aluminum foil, place down half a stick of butter sliced into sections, and finish it off with a big drizzle of honey.
Place your ribs meat side down onto the foil and wrap them tightly.
Put the wrapped ribs back on the grill bone side down at 275F for 2 more hours.
Remove the ribs from the foil, and baste them with some of your favorite BBQ sauce if you would like. Smoke them a final 30 minutes to create a beautiful glaze.
Let them rest for at least 20 minutes before slicing and enjoying these delicious ribs!
