North Carolina BBQ is often considered the originator of BBQ in the Americas, and where pork is KING! As they say, it ain’t BBQ if it’s not whole hog.

Steps

  1. Remove membrane from ribs, use Texas Pete (or your favorite hot sauce) as a binder, then coat with your favorite NC BBQ Rub! Do this to both sides of the ribs. 
  2. Place on a preheated smoker at 275°F. for about 3 hours.
  3. At the 3-hour mark, go ahead and squirt with your favorite North Carolina vinegar mop sauce. Do this 2 more times over the next hour.
  4. Remove ribs when they are tender, and let rest for about 15 minutes before you slice to serve. 
  5. Enjoy these delicious Eastern NC Ribs!
