Double Smoked Ham with Bourbon Pineapple Glaze

Until internal temperature reaches 145°F

Steps

  1. Preheat your smoker to 275°F.
  2. Cross hatch the fat cap of your ham then cover with duck fat spray as your binder. 
  3. Generously coat all sides of your ham with your favorite seasoning, like Meat Church Honey Hog. 
  4. Place on the smoker and cook until your internal temperature reaches 145°F.
  5. While the ham is cooking, assemble your glaze. In a heavy bottom pot, add butter and melt. Add brown sugar, apricot preserves, chopped pineapple with the juice, and bourbon. Mix well so everything is incorporated. 
  6. Once your ham is at the right internal temperature, spoon on the glaze and allow to cook for another few minutes until the glaze tacks up a bit. 
  7. Remove from the smoker and enjoy!

Ingredients:


Pineapple Glaze

  • 2 sticks butter
  • 1 jar of apricot preserves
  • 1 can chopped pineapple with the juice
  • 1 cup brown sugar
  • 2 oz. bourbon
