A rich, smoky casserole loaded with sweet corn, creamy pimento cheese, and tender crab — crafted by Bear Mountain BBQ ambassador Frank Campanella for the perfect comfort-food side or holiday dish.

Steps

  1. Preheat your pellet grill to 325°F.
  2. In a large mixing bowl, combine whole corn, cream corn, Jiffy mix, eggs, ½ stick melted butter, and Old Bay. Stir until fully incorporated.
  3. Gently fold in the pimento cheese and crabmeat.
  4. Pour the mixture into a greased 12-inch cast-iron skillet.
  5. Smoke at 325°F for 1 hour, or until fully set and a toothpick inserted in the center comes out clean.
  6. Cut the remaining butter into pats and place on top of the casserole. Let melt for 5 minutes, then brush evenly across the surface.
  7. Season with additional Old Bay and garnish with scallions.

  • 2 - 15.25 oz cans whole corn, drained
  • 2 - 14.75 oz cans cream-style corn
  • 2 large eggs
  • 2 boxes Jiffy Corn Muffin Mix
  • 1 stick butter, divided
  • 1 cup whipped pimento cheese
  • 1lb. claw crabmeat
  • 2 tsp Old Bay seasoning
  • ¼ cup scallions, thinly sliced
