Steps
- Preheat your smoker to 350F
- Take your thick cut bacon strips and cut in half. Place them on a wire rack and into the smoker at 350F until to your desired doneness.
- While your bacon is cooking, season both sides of each chicken breast with Meat Church Texas Sugar rub. Place the chicken into the smoker at 350F for about 45 minutes.
- When your internal temperature hits 150F, coat the chicken breasts in BBQ sauce and top with cooked bacon and shredded Colby Jack cheese.
- Place back in smoker for about 15 minutes or until the internal temperature hits 165F.
- Remove from smoker and enjoy!
