Steps

  1. Preheat grill or oven to 350°F degrees. Meanwhile, place a large pan over medium heat and add olive oil.
  2. Once the oil is hot, add the onions and sauté until tender. Next, add in the garlic and cook until fragrant.
  3. Add the ground beef and taco seasoning, making sure to break up the beef into bits. Cook until the ground beef has browned throughout.
  4. Add in the black beans and the next 8 ingredients, reserving ¼ cup of the cheese for later. Mix this until well combined. Pour the mixture into a cast iron skillet.
  5. Top the mixture with an even layer of tater tots and cover with a lid. Add the skillet to the preheated grill/oven and cook for 20 minutes. After 20 minutes, remove the lid and continue cooking until the tater tots have browned and started to crisp.
  6. Remove the skillet from the grill and allow it to cool for 5 minutes. Serve and enjoy!

Ingredients:

  • 1 lb. ground beef
  • 1 sweet onion – diced 
  • ¼ Cup taco seasoning
  • 2-3 garlic cloves – minced
  • olive oil - as needed
  • 1 (15 oz.) can black beans – drained 
  • 1 (15 oz.) can pinto beans – drained
  • 1 (14.5 oz.) can fire-roasted diced tomatoes – drained 
  • 1 (4 oz.) can hatch green chiles
  • ¼ Cup sour cream
  • ¾ Cup shredded cheese
  • 1 Tsp hot sauce + more to taste
  • 1 (15 oz.) can corn kernels
  • 1 (32 oz.) bag tater tots
