Country Style Pork Ribs with Spicy Peach Mop Sauce

Preheat grill to 300°F. Meanwhile, season the pork liberally with salt and pepper. Once the grill is preheated, add the pork ribs. Allow them to cook, flipping as needed, until they begin to develop a deeper color.
For the mop sauce, combine mayonnaise, molasses, hot sauce, Worcestershire sauce, white vinegar, peach juice and lime juice. Whisk until combined and add salt and pepper to taste.
Once the ribs hit around 150°F, give them a few hits of the mop sauce. When the internal temperature reaches 165°F, remove them from the grill.
Place the ribs in an aluminum pan, liberally apply the mop sauce and butter. Wrap the pan tightly with foil and place it back in the grill.
Once the internal temperature reaches 200°F-205°F and the ribs are probe tender, remove from the grill. Allow them to cool, then serve!

Ingredients:

2lbs. country-style pork ribs
Salt & pepper to taste
8 tbsp (1 stick) unsalted butter
1/3 cup mayonnaise
¾ cup molasses
2 tsp hot sauce
1 tsp Worcestershire sauce
¼ cup distilled white vinegar
½ cup peach juice
½ lime – juiced
