Chili Cheese Baked Potatoes

Fluffy potatoes get piled high with hearty, smoky chili and melty cheese, making this the ultimate comfort food with a backyard BBQ twist.

Steps

  1. In a large Dutch oven, brown the ground beef and hot sausage.
  2. Remove the meat and sauté onions, garlic, and chipotles in adobo.
  3. Add the beer to deglaze the pan before adding the rest of the ingredients.
  4. Place the Dutch oven on the smoker and cook at 200°F for about 8 hours until it thickens (depending on desired consistency). We used Bear Mountain Tailgating pellets.
  5. Towards the end of your cook, go ahead and get the baked potatoes cooked.
  6. Once the chili has reached a desired consistency, remove and serve over the baked potato topping with cheese, jalapenos, and green onions!

Ingredients:

  • Bear Mountain BBQ Tailgating BBQ pellets
  • 1 lb. ground beef
  • 1 lb. hot sausage
  • 3 onions – diced
  • 1 head of garlic – minced
  • 2 – 28 oz. cans crushed tomatoes 
  • 1 – 28 oz. can of diced tomatoes
  • 1 can chipotles in adobo
  • 1 can of beer
  • 3 TBSP chili powder
  • 1 TBSP ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp red pepper flake
  • ¼ tsp cayenne pepper
  • ¼ tsp ground cinnamon
  • russet potatoes
