Do you need the perfect appetizer for your next summer gathering? This queso from Bear Mountain ambassador, Nick Nesgoda, will check all the boxes! Packed with a ton of flavor, it will be the highlight of your summertime meal!

Steps

  1. Fire up the grill to 350°F with Bear Mountain BBQ Maple Bourbon Pecan pellets, exclusively available at Walmart. 
  2. Cook 1lb of thick cut bacon in a skillet until crispy, then remove and chop into bite sized pieces. 
  3. Season 2lbs of chicken thighs with your favorite BBQ rub.
  4. Grill the chicken thighs at 350°F until they reach an internal temperature of 165°F then remove and chop into bite sized pieces. 
  5. In a skillet combine cubed pepper jack cheese, cubed queso blanco, chopped chicken (reserve ½ a cup), Rotel tomatoes, diced green chilies, ranch seasoning, and evaporated milk.
  6. Place the skillet on the smoker at 325°F and let it smoke for 30 minutes, stirring every 10 minutes. 
  7. Make the homemade ranch by combining all ingredients into a bowl and mixing thoroughly. 
  8. Remove the queso from the grill and top with remaining ½ cup of chicken coated in your favorite BBQ sauce, crumbled bacon, green onions, and drizzle with your homemade ranch dressing. 
  9. Serve with your favorite chips and enjoy!

Ingredients:

  • 1lb. thick cut bacon
  • 2lb. chicken thighs
  • 16oz. pepper jack cheese – cubed
  • 16oz. queso blanco – cubed
  • 1 can Rotel tomatoes 
  • 1 can green chilies – diced 
  • 1 Ranch seasoning packet
  • 1 can evaporated milk
  • BBQ rub
  • BBQ sauce 
  • green onions – sliced 
  • Bear Mountain BBQ Maple Bourbon Pecan Pellets

Homemade Ranch:

  • ¾ cup sour cream
  • ½ cup mayonnaise 
  • ¼ cup chicken broth
  • 1 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper
