  1. In a pan, sauté peppers and onions in butter until caramelized, season with salt, pepper, and garlic then set aside. 
  2. In the same pan, cook down your shaved ribeye. Once it is almost fully cooked add the peppers and onions back in and top with white American cheese. Fold in the cheese so it melts and is well incorporated. Remove the cheesesteak mixture and let cool completely in the refrigerator. 
  3. In a large bowl, combine the two pounds of ground beef with two eggs and two tablespoons of Worcestershire sauce then season with salt, pepper, and garlic. Once the mixture is combined, spread out half of the mixture onto a sheet of parchment paper and form into a large rectangle, about 10 x 6. 
  4. Take your cheesesteak mixture and lay it down the center of your shaped ground beef. Tightly wrap the ground beef around the mixture into a cylinder with foil and place it into the refrigerator for about 30 minutes. 
  5. When it’s time to cook, remove the foil wrapper, season with a BBQ dry rub on all sides and place on the smoker at 275°F using Bear Mountain Tailgate pellets for about 90 minutes, or until you reach an internal temperature of 155°F - 160°F.
  6. Let it rest for about five minutes before slicing and serving. Serve with cherry pepper mayonnaise on the side.

Ingredients:

  • 1lb. shaved ribeye
  • 2lb. ground beef
  • 2 tbsp butter
  • 1 yellow onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 8 slices white American cheese
  • 2 eggs
  • 2 tbsp Worcestershire sauce
  • salt – to taste
  • pepper – to taste
  • garlic – to taste
  • Bear Mountain BBQ Tailgating pellets

Cherry Pepper Mayo:

  • 3 tbsp cherry pepper relish
  • ¾ cup mayonnaise 
  • 2 tbsp water
