Cajun Honey Sausage & Shrimp Skewers

Sweet heat, smoky flavor, and plenty of Cajun kick—these sausage and shrimp skewers from ambassador Miguel Raya are built for summer grilling. Louisiana hot links and seasoned shrimp get smoked low and glazed with a rich Cajun honey butter that caramelizes into every bite.

Steps

  1. Season the shrimp evenly with Cajun seasoning.
  2. Cut the Louisiana hot links into ½-inch pieces.
  3. Wrap each shrimp around a piece of sausage and secure onto skewers.
  4. In a small saucepan over low heat, combine the butter, honey, and Cajun seasoning. Stir until smooth and fully combined.
  5. Preheat your smoker to 225°F using Bear Mountain Gourmet Blend pellets.
  6. Place the skewers on the smoker and cook until the shrimp reaches 140°F internal, about 30–45 minutes.
  7. During the last 10–15 minutes of cooking, baste the skewers with the Cajun honey butter every few minutes to build layers of flavor and glaze.
  8. Remove from the smoker and serve immediately.

Skewers

  • 2 lbs large shrimp, peeled and deveined 
  • 2 tbsp Cajun seasoning 
  • 8 Louisiana hot links, cut into ½-inch pieces 


Cajun Honey Butter

  • ½ cup unsalted butter 
  • ½ cup honey 
  • 2 tbsp Cajun seasoning
