Steps

  1. Fire up your smoker to 250°F using Bear Mountain Cherry Pellets. The pellets will give the pork loin a beautiful color and subtle sweetness.
  2. Liberally coat the pork loin with TFTI Cajun Honey Rub.
  3. Place the pork loin on the smoker and cook for 2 hours, or until the internal temperature reaches 145°F.
  4. Prepare a sheet of aluminum foil with butter, additional Cajun Honey Rub, and a drizzle of hot honey. Place the smoked pork loin in the foil, wrap tightly, and let rest in a holding cabinet or cooler with a towel for 1 hour. This allows the juices to redistribute throughout the meat.
  5. Unwrap, slice, and enjoy a tender, smoky pork loin with a hint of sweet heat.
