Steps
- Preheat your smoker to 350°F.
- Add the drained peaches, bourbon, vanilla extract, brown sugar, and cinnamon to a cast iron skillet. Stir until the peaches are evenly coated.
- In a separate bowl, combine the cornbread mix, milk, egg, and melted butter. Mix until just combined.
- Pour the cornbread batter evenly over the peach mixture.
- Place the skillet on the smoker and cook for 30–45 minutes, until the cornbread is golden brown and cooked through. Check with a toothpick—it should come out clean or with a few moist crumbs.
- Remove the cobbler from the smoker and drizzle the honey over the warm cornbread topping.
- Let cool for a few minutes, then serve warm with a scoop of vanilla ice cream.

Peach Filling
- 1 (15.25 oz) can sliced peaches, drained
- ¼ cup bourbon (optional)
- 1 TSP vanilla extract
- ½ cup brown sugar
- 1 TSP ground cinnamon
Cornbread Topping
- 1 box cornbread mix
- ⅔ cup milk
- 1 egg
- ⅔ cup melted butter
For Finishing
- 2 TBSP honey
- Vanilla ice cream, for serving
